Overall, dairy consumption moved in opposite directions in the Western and the Asian countries, with the figures for both products falling in France and the USA but rising in India and China. Butter remained an overwhelmingly French speciality throughout.
In the two Western countries, the decline was gradual rather than steep. American milk intake, the highest in the table at 60 kg per person in 2019, slipped to 54 kg five years later, thereby allowing India—up from 48 kg to 55 kg—to overtake it as the leading milk consumer. French butter intake, having eased from 7.8 kg to 7.2 kg, still stood at least three times the figure for any other country.
The Asian countries, by contrast, recorded consistent growth from far lower starting points. China posted the sharpest rises in relative terms: its milk consumption rose by more than a third, from 22 kg to 30 kg, while its butter figure, though still the smallest in the table, nearly doubled from 0.8 kg to 1.4 kg.
